FARMER CHEESE LATKES

Ingredients

  • 4 eggs

  • 8 ounces farmer cheese

  • 3 Tbsp sugar

  • 1 tsp vanilla extract

  • 3 Tbsp oil or margarine

  • Dash of salt

  • ⅓ cup matzoh meal

  • ½ cup oil for frying

Directions

  1. Beat eggs in a large bowl. Add all remaining ingredients except matzoh meal and frying oil. Mix until well blended.

  2. Add matzoh meal and mix until smooth.

  3. Heat ½ cup oil in a skillet.

  4. Using a large spoon, drop batter into the hot oil. Fry for 5 minutes on each side, or until lightly browned.

  5. Continue until batter is used up, adding oil when necessary.
